In the industrial manufacturing of block cheese, sandwich slices, and firm-textured processed cheeses, the primary quality benchmark is excellent sliceability—ensuring the matrix can be sliced smoothly without crumbling, tearing, or breaking apart. The Fosfa® Process Block Cheese series is explicitly engineered to build this tight, cohesive physical structure, strengthen the protein network, and provide high thermal stability (thermostability).
Unlike formulations designed for triangle cheeses, the emulsifying salts and polyphosphate blends in this series completely suppress or minimize the softening "cream effect". By tightly cross-linking the native casein network, they deliver exceptional clean slicing performance. Furthermore, end products manufactured with these specialized mineral salts possess outstanding resistance to heat. Due to this unique thermostability profile, the resulting block cheeses maintain their shape and body during thermal processing without melting away; thus, they are widely used as functional, structurally sound ingredients inside meat or fish sausages, industrial patties, and convenience food fillings. Extended shelf life is another significant operational advantage provided by these emulsifying salts.
